Apple pie is one of those desserts that there are probably hundreds, if not thousands, of ways to make. But sometimes it’s possible to put a new spin on even the simplest-seeming version. Take, for instance, Trisha Yearwood‘s easy cast iron skillet apple pie, which comes from her cookbook Trisha’s Table. How can a pie that’s made with store-bought crust and pre-made apple pie filling make a name for itself? It all has to do with the skillet — and plenty of brown sugar.

Yearwood’s apple pie recipe really couldn’t be simpler, but what makes it stand out is the way the pie is assembled. First, Yearwood melts butter in a cast iron skillet. To that, she adds in a cup of brown sugar, stirring until the sugar has dissolved slightly into the melted butter. Then — and this is the part where the magic happens — she adds the pie crust to the skillet, on top of the brown-sugar butter mixture. That gets filled with a can of apple pie filling and topped with a second pie crust before the skillet goes into the oven.

As the pie bakes, the brown sugar butter mixture caramelizes and sticks to the pie crust. When you cut the pie into slices for serving, each piece has a candied crust on the bottom, warm apple pie filling in the middle, and a buttery, flaky crust on top. Yearwood serves hers with homemade cinnamon whipped cream, and it’s delicious with vanilla ice cream, too.
